Black pepper which is also known as the '˜king of spices" is widely cultivated in tropical regions such as India, Brazil and Indonesia. It is commonly found in every Indian household kitchen and it is used in a variety of food preparations. Besides being used as a culinary spice, black pepper is used as a preservative, a medicinal agent and in perfumery. Piperine, an active compound of black pepper is responsible for the strong, sharp and spicy characteristic of it.
