Types of Fish Cuts
The types of fish cuts available include:
- Fillet - the boneless flank of the fish.
- Dressed - with head and fins (entrails, scales and gills are removed).
- Steak - cross-sections taken from a dressed fish.
- Gutted - whole fish with entrails removed.
