Nutritional qualities

A powerhouse of nutrition spinach has a lot to offer. Disease fighting carotenoids, indoles, isothiocyanates, vitamin C, calcium and iron are some of them. The calcium in these leaves is in the bound form and so not very effectively utilised. The iron has the same story and so is not very effective when absorbed by the body.

It is also loaded with folate and lutein, a cancer fighting antioxidant. Beta-carotene in the greens is especially beneficial for the eyes as it is the pro form of vitamin A.

Soybean is said to absorb the highest amount of chemicals from the fertilizers in the process of growing. Hence it is harmful. What do u say?
