What is Cempedak?

Cempedak, scientifically known as Artocarpus integer, belongs to the same genus as of Jackfruit and Breadfruit. Native to Southeast Asia, Cempedak is widely grown in Indonesia, Thailand and Malay Peninsula. In India, it grows in the southern states of Kerala, Andhra Pradesh and Tamil Nadu. Cempedak grows in tropical regions where water is available in abundance. Coastal regions provide the apt environment for their cultivation.

Cempedak trees are evergreen with height up to several meters. The fruit is somewhat smaller in size than Jackfruit and contains soft juicy and sweet flesh covering large seeds. Ripe cempedak is yellow in color and is sweeter than jackfruit. Its flavor is musky, aromatic and savory that resembles durian and mango. It has many medicinal benefits owing to its high nutritional profile. It has a good amount of ascorbic acid, enzymes, bioflavonoid, minerals and vitamins.

Cempedak Recipes

Chocolate Dipped Cempedak

  • Preparation time 1hr

Ingredients:

  • Cempedak fruit flesh
  • Melted chocolate

Method:

  • Remove all seeds from the cempedak fruit.
  • Puree the flesh in a grinder till smooth.
  • Allow the puree to set in a mold for some time in freezer.
  • When set dip these fruit squares in melted chocolate.
  • Serve as it is or freeze it again before serving.

Cempedak Fritters

  • Preparation time 10 min
  • Cooking time 15 min

Ingredients:

  • Cempedak fruit
  • Rice flour- 1 cup
  • Corn flour- ¼ cup
  • Sugar if required
  • Salt according to taste
  • Oil for frying
  • Water-1 cup or as required

Method:

  • Cut the cempedak fruit and take out the flesh only
  • In a bowl, combine rice flour, corn flour, salt, sugar and water and make a batter of dripping consistency
  • In a pan keep the oil for frying.
  • When the oil is hot enough, cover the cempedak flesh with batter and fry in oil.
  • Fry till they turn golden brown on each side.
  • Serve the delicious fritters when warm.

Tip: You can even fry it along with seeds as a whole.
