Healthy White Wine Being Developed

Researchers from Technion, the Israeli Institute of Technology have revealed that it is possible to fortify white wine so that it mimics the healthy properties present in red wine.

Red wine includes polyphenols believed to help fight heart disease. However white wine does not have the same properties as it is not prepared by fermenting grape skins.

But the researchers found that by incubating squeezed grapes in the presence of alcohol for 18 hours before removing grape skins could increase the polyphenol content of white wine by six fold.

"There has been an incredible response from those that have heard about the research, with many thinking of taking up drinking white wine more seriously," said Professor Michael Aviram, a researcher at Technion's Faculty of Medicine.

The new wine is expected to be available in the US by the end of the year.
