Despite the goodness of raw vegetables, one must also know that uncooked vegetables are home to deadly germs like E. coli and Salmonella.

Such lethal germs hang on obstinately in the inner layers of the vegetables and it may not be possible to wash them away. Repeated washing may also not serve the purpose.    

Such vegetables when consumed raw can cause severe infection. The only way to completely eliminate these germs from the food is to cook the food properly so that the pathogens are destroyed.
