Puliyodanam (Tamarind Rice)


Preparation

Ingredients

Tamarind - 100 gm
Sesame oil - 30 ml
Red Chilly - 6 nos
Fenugreek - 1 Spoon
Mustard - 1 Spoon
Turmeric - 2 Pinches
Salt - To taste
Coriander Seeds - 20 gm
Asafetida - 2 Pinch
Rice - Quantity sufficient

Method

  1. To prepare tamarind rice (Puliyodanam), first a spicy paste of tamarind (Pulikaachal) has to be prepared

  2. Preparation of Pulikaachal-
    - Soak tamarind in the warm water
    - Squeeze the tamarind juice into a thick consistency
    - Add turmeric powder, salt and roasted red chilly in it
    - Season mustard, fenugreek and asafetida using sesame oil
    - Add the tamarind paste into the seasoning
    - After it starts boiling, add roasted and peeled ground nuts
    - Then stir it continuously till it acquires a paste- like consistency
    - Towards the end, add roasted coriander powder to it and mix well

  3. Now take the cooked rice in a wide- mouthed bowl
  4. Add 1 spoon of sesame oil
  5. Add 2 - 3 spoons of Pulikaachal to the rice
  6. Mix them well and serve
Indications

  • It cures vomiting
  • It is useful in Anorexia
  • It improves the agni
  • It balances Vata and Pitta
